Wordless Wednesday


Menu Monday~Florentine Eggs on English Muffins
6 oz fat free Greek yogurt
1 Tbsp Mayo (Cholesterol free)
1/2 tsp Dijon mustard
2 eggs
1/2 c baby spinach
1 whole wheat English Muffin (Not just "wheat"--make sure it's whole wheat.)

Mix Greek yogurt with Dijon & set aside. Toast muffin and lay a bed of spinach on each side using 1/4 c spinach per side.


In a small glass container or microwave-safe bowl, add a tablespoon or two of water. Crack one egg into the container and cover snugly with plastic wrap. Microwave until you hear a faint "pop" noise; this is a sign the egg is done. Use a fork to carefully lift the egg from the water & place on top of spinach. Repeat with 2nd egg. (Be sure to use fresh plastic wrap.) Once eggs are done, warm mayo and Dijon mixture for about 20 seconds & top eggs. Sprinkle with fresh ground pepper.

Menu Monday (a day late) - Meatless Monday Burritos
Menu Monday comes a day late due to the scheduled blog post regarding The Mommies Network Weigh-In Challenge. If you haven't read about it yet, please check it out!

The best part about this recipe is that it's incredibly easy. Here is what we used:

For the wraps:
Whole wheat burrito wraps. (I like the Smart & Delicious High Fiber, Low Carb variety from La Tortilla Factory)
Refried beans (We used Market Pantry black beans w/lime)
1 Red pepper
1 Green pepper
2 Medium Zucchinis
1 Tbsp Olive Oil

Sauce:
1/2 c Salsa
6 oz low fat Greek Yogurt

Mix ingredients for sauce together & set aside in refrigerator.

Slice peppers and zucchini into thin strips and saute them in the olive oil over medium-high heat for about 7 minutes, or until crisp-tender. Warm the beans and tortillas using your preferred method, and put 1/4 cup of the beans along the center of a tortilla. Top with 1/4 of the vegetables. Add 2 tbsp of the sauce to the top of the burrito.
